Crystal Structures of NOV1
The crystal structures of NOV1 were determined to 1.61 Å without ligand, 1.89 Å with resveratrol (a substrate), and 1.75 Å with vanillin. (A) The overall fold of NOV1 is a seven-bladed β-propeller. A mononuclear iron (orange) coordinated by four histidines is located down the central axis of the propeller. Dioxygen (red) is shown coordinated to the iron, and resveratrol (blue) binds with its central double bond proximal to the oxygen. (B) A surface slice representation, oriented perpendicular to the β-propeller axis shows the shape of the active site cavity and the arrangement of iron, dioxygen, and resveratrol.

During the kraft process used to convert wood into wood pulp, the structural material lignin is partially converted into molecules like stilbene. Stilbenes are also naturally occurring in plants and some bacteria, and may play a role in plant pathogen resistance.
